12 won ton wrappers
1lb fresh yellow fin tuna
¼ cup sesame oil
½ tsp sambal oelek (Asian hot chilli sauce found in Kirk Supermarket or the Chinese market in George Town)
1 tsp toasted black sesame seeds
Splash soy sauce
Crisp the won ton wrappers in hot oil and set aside. Cut the tuna into 1/8 inch dice and add the sesame oil, sambal oelek, sesame seeds and soy sauce. Mix to combine. Spoon the tuna mix into the won ton crisps and garnish with a sprig of cilantro. Chef Keith said you could also work some chopped scallions into the mixture for added flavour.
