Keith’s focus for the evening was to provide us gels with a raft of clever but easy dinner party appetiser recipes that we could keep up our sleeves and whip out, Nigella-fashion, as soon as the need arrived. And all ingredients were easily available on island, either at the supermarkets or at the Oriental Market in town near the Post Office.
First up was a Roasted Onion and Gorgonzola Tart (see below), simplicity itself: with just a sheet of puff pastry, a saucepanful of sautéed onions and a crumble of blue cheese you have a tart to win hearts. Keith said you could sexy it up a bit with mushrooms, prosciutto or maybe some chopped cherry tomatoes scattered over the top. Cut into bite-sized pieces, serve with some greenery and voila!
Finally Keith took a stab at making morsels of smoked salmon atop frozen swirls of sour cream, in a bid to make savoury ‘candies' (see left and right below). The idea was fab but alas the swirls of sour cream didn’t freeze in time for the full effect. Never-the-less a great idea and one to try out at home.
